DE, sweetness and what your formula actually needs
Dextrose equivalent (DE) tracks reducing sugar content and perceived sweetness. High-DE liquid glucose behaves like a sweet, viscous syrup; maltodextrin at DE 10–20 adds solids with minimal sweetness — critical when you are balancing Maillard colour vs sugar claim on the label.
Swapping maltodextrin into a recipe written for liquid glucose without reformulating water activity fails in hard candy, fondant and some beverage viscosities. Share your incumbent COA DE and moisture on the RFQ.
Process fit — bakery, beverage, confection
Liquid glucose: rolling and sheeting, chew texture, humectancy in cakes, and many traditional mithai / confection boils where invert sugar or glucose syrup is specified by name.
Maltodextrin: dry premixes, infant-food-adjacent carriers (when your audit allows), bulking in seasonings, and spray-drying partners where low sweetness and high solids in powder form matter.
COA, FSSAI-adjacent documentation and storage
Ask COA for: DE (or supplier equivalent), moisture, solids %, microbiology per your QA sheet, heavy metals if export, and lot matched to invoice. Food-grade is not implied by the word “glucose” on a trader quote — write food grade on the PO.
Liquid glucose drums need clean, dry storage and FIFO — fermentation and viscosity drift show up in summer sheds. Maltodextrin bags cake if pallets sit on a wet floor; same monsoon discipline as sugar and starch.
